Ingredients
For this recipe, you will need the following ingredients:
  • 1 whole chicken, cut into pieces
  • 3 tablespoons olive oil
  • 2 large onions, julienned
  • 4 cloves garlic, minced
  • 2 red peppers, cut into strips
  • 3 ripe tomatoes, peeled and chopped
  • 1 cup chicken stock
  • 1 cup white wine
  • 2 bay leaves
  • 1 sprig thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Preparation
  1. Prepare the ingredients: Wash and chop all vegetables as directed. Make sure the chicken pieces are well cleaned and dry.
  2. Sear the chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces and brown on all sides until well seared. This step is important so that the chicken retains its juices. Once browned, remove the chicken and set aside.
  3. Saute the vegetables: In the same pan, add the onions and garlic. Sauté until the onions are translucent. Then add the peppers and continue cooking for a few more minutes.
  4. Add the tomato: Add the chopped tomatoes to the pan and cook until they break down and form a sauce. This process will take about 10 minutes. Be sure to stir constantly to prevent sticking.
  5. Transfer to the casserole: Preheat the oven to 180°C (350°F). In a ceramic casserole dish, place the browned chicken pieces. Pour the vegetable and tomato mixture over the chicken.
  6. Add the stock and wine: Add the chicken stock and white wine to the casserole dish. Place the bay leaves and sprig of thyme on top. Season to taste with salt and pepper.
  7. Cooking in the oven: Cover the casserole with its lid or with aluminium foil and place in the oven. Cook for 1.5 hours, or until the chicken is tender and cooked through.
  8. Serve: Remove the casserole from the oven and allow to rest for a few minutes before serving. Garnish with chopped fresh parsley.
